We make our dough with a small amount of Italian dry yeast and let it ferment for 72 hours. Traditional sourdough uses a maintained starter, so these are different methods of fermentation. Our three-day process gives the dough time to develop flavor and an airy structure before baking. That combination of time, ingredients and technique is central to our Roman-style pizza.
